Do I have to establish persecution in BOTH my parents countries to be eligible for asylum in US?

You have to prove that you face a risk of persecution in the country where you have been residing. If you do not hold citizenship or residency rights in your mother's country, then you wouldn't need to show any risk of persecution, i.e., you wouldn't have to explain why you're not livng there instead.
